Terroir

• The vineyards in the lands of the villages of Dimitrovche, Momkovo, Mustrak, the town of Svilengrad, and the village of Mezek are situated at the foot of the southwestern slopes of the Sakar mountain, along the Maritsa river valley.
• The average altitude of the region is between 150 and 300 metres.
• The climate in this part of the Thracian Lowland is a characteristically transitional Mediterranean climate, with a cumulative temperature sum for the April–October period of 4,200 °C.
• The mean daily temperature of the warmest month is 24 °C, and total annual precipitation is approximately 600 mm.
• The soil types in the region are leached cinnamon forest soils and calcareous chernozem-like soils.

• The maximum permitted grape yield for the production of wine with the protected designation of origin Sakar is limited to 9,000 kg per hectare of vineyard.
• Vine pruning is mixed and short, with a bud load of up to 54 buds per vine, and the training systems include Umbrella, Moser, and high-trunk double cordon.

• The white wines are characterised by an intense, deep yellow-green colour, with aromas dominated by notes of ripe yellow fruits.
• The red wines display a deep ruby-red colour, with aromas predominantly showing nuances of ripe dark fruits and jammy notes.

• The high cumulative temperature sum of the region, combined with the hilly terrain and minimal precipitation, as well as the mandatory conditions determined by human intervention, favour the production of highly extractive, aromatic, and high-alcohol white and red wines.
