Terroir

• The vineyards are situated in the Pazardzhik Plain, located in the westernmost part of the Upper Thracian Lowland, between the northern slopes of the Rhodopes and the foothills of Sredna Gora.
• The climate is transitional-continental, with hot, dry summers and moderately cold winters.
• The total heat summation for the period with mean daily temperatures above 10 ºC, spanning the months of April through October, is 3,830 ºC.
• Annual precipitation totals approximately 500 mm, and the mean daily temperature of the warmest month is 23.8 ºC.
• The soil cover consists of alluvial-deluvial soils, ranging from clay-sandy to slightly sandy-clay in texture.

• The authorised grape varieties for the production of wine bearing the protected designation of origin Septemvri are Cabernet Sauvignon and Mavrud.
• Training systems used in the vineyards include Umbrella, Moser, and mid-trunk double-arm cordon, with pruning that is mixed and short, carrying a load of up to 54 buds per vine.

• The wines produced are ruby-red, with pronounced aromas of dark forest fruits and pepper, and a palate that is full-bodied and slightly astringent.

• The transitional-continental climate, combined with the natural protection afforded by the mountain slopes and the alluvial-deluvial soils with their sandy component, determines the distinctive character of the wines produced.
