Terroir

• The vineyards are situated in the Shivachevska Basin, one of the smallest sub-Balkan basins, and on the southern foothills of the Eleno-Tvardishka mountain range, part of Stara Planina.
• The climate is foothill and low-mountain, transitional-continental, and the average elevation of the area is 300 m.
• Total annual precipitation in the area is 808 mm, and the cumulative heat sum for the period with mean daily temperatures above 10 ºC (April–October) is 3,700 ºC.
• The mean daily temperature of the warmest month in the area reaches 21.3 ºC.
• Soils in the area are shallow, leached cinnamon forest soils, ranging from sandy-clay to heavy sandy-clay in texture.

• The permitted grape varieties for white wines are Chardonnay, Sauvignon Blanc, and Muscat Ottonel, and for red wines and rosé – Cabernet Sauvignon, Merlot, and Pamid.
• Vine-training systems are Umbrella, Moser, and mid-trunk double-arm cordon, with mixed and short pruning to a maximum load of 54 buds per vine.

• The white wines display a bouquet of citrus-fruit aromas with pleasant floral accents, while the palate is fresh, harmonious, and balanced with a sense of juicy acidity.
• The red wines are vividly coloured, with a complex nose combining spices, vanilla, blackcurrant, pepper, small wild berries, and dried leaves, and a powerful, full-bodied palate with a mild warmth.
• The rosé offers fruit aromas of strawberries and raspberries, with clearly expressed fruitiness and freshness on the palate.

• The foothill climate of the Shivachevska Basin, the shelter from the north provided by Stara Planina, and the sandy soils, together with constraints on the human factor, favour the production of the white wines, red wines, and rosé characteristic of the area.
