Terroir

• Shivachevska Basin – one of the smallest sub-Balkan basins, with an average elevation of 300 m above sea level.
• Sub-montane and low-montane transitional-continental climate; annual rainfall 808 mm.
• Soils: shallow leached cinnamon forest soils, ranging from sandy-loam to heavy sandy-clay.
• Protection from the north by the slopes of Stara Planina (Eleno-Tvardishka range) – a key microclimatic factor.

• Permitted varieties: whites – Chardonnay, Sauvignon Blanc, Muscat Ottonel; reds/rosés – Cabernet Sauvignon, Merlot, Pamid.

• White wines: a citrus bouquet with floral accents, a fresh and balanced palate with juicy acidity.
• Red wines: spice, vanilla, blackcurrant, pepper, and wild berries; a powerful, full-bodied palate with a light warming finish.

• The sub-montane climate and northerly shelter provided by Stara Planina shape the fresh, balanced palate characteristic of the white wines.
• The sandy-loam soils contribute to deeply coloured red wines with aromas of blackcurrant, pepper, and small wild berries.
