Terroir

• The village of Slavyantsi is located in the Sungurlare valley in Eastern Bulgaria, enclosed on three sides by ridges of Stara Planina, which shelter it from northern and western winds, while to the east it is mildly exposed to the influence of the Black Sea.
• These geographical conditions give rise to a relatively mild winter, warm autumn and cool summer with high atmospheric humidity in the area of the vineyards.
• The vineyards are situated at the foot of Stara Planina at an altitude of 216 metres on leached cinnamonic forest soils, with hilly terrain and southern exposure.
• The total temperature sum for the period with average daily temperatures above 10°C, covering the months from April to October, is around 3200°C, with an average daily temperature in July of 20.9°C.
• The average annual rainfall in the vineyard area is around 600 mm.

• The wine grape variety authorised for the production of wine with the PDO "Slavyantsi" is Chardonnay, which is the only permitted variety for this protected designation.
• The training systems used in growing the vines include umbrella, Moser and medium-trunk double-arm cordon, with mixed and short pruning at a load of up to 54 buds per vine.

• The wine has a deep, golden colour, and the aroma is intense with an accent of smoke and spice.
• The palate is concentrated and full-bodied with a spicy finish and nuances of wax, smoke, vanilla, spice and nuts.

• The warm autumn and cool summer with high atmospheric humidity, combined with the characteristic light sandy soils with relatively low humus content and the constraints of the human factor, favour the production of Chardonnay wine with characteristic aromas and a harmonious balance of acidity, alcohol and extract.
