Terroir

• Temperate-continental climate of the sub-Balkan valleys: mild winters and relatively hot summers.
• A local wind known as the Bora — a characteristic climatic factor for the Sliven area.
• Soils: deluvial and cinnamon forest soils (leached, differentiated to varying degrees).
• The vineyards lie at the foot of the southern slopes of Mount Grebenets — the beginning of the Eastern Stara Planina.

• Permitted varieties for red and rosé wines: Cabernet Sauvignon, Merlot, Pinot noir, Pamid, and Shevka; for white wines: Rkatsiteli, Chardonnay, Dimyat, Aligoté, and others.

• White wines: fruity and floral aromas, elegant body, freshness, and a long varietal finish.
• Red wines: intense aromas of red forest fruits and spices, balanced structure, a fresh, slightly astringent, full-bodied, and soft palate.

• Deluvial and cinnamon forest soils are identified as the principal soil types associated with viticulture in the PDO Sliven area.
