Terroir
Natural factors
- The Slovácká wine sub-region is formed by parts of the Hodonín, Uherské Hradiště, Břeclav, Zlín, and Kroměříž districts within the Morava wine region. (via Wikipedia · CC BY-SA 4.0)
- The pattern of rainfall and temperatures during autumn days can lead to infection of the grapes by noble rot (botrytis), which influences wines of the Výběr z bobulí and Výběr z cibéb styles.
- The tannin structure of red wines is influenced by the geomorphological conditions of the site, the colour of the vineyard soil surface, and the pattern of temperatures, solar radiation, and rainfall.
- In rosé wines at the Výběr z hroznů level, soil permeability and surface colour, together with solar radiation, have a significant influence on flavour characteristics.
Product characteristics
- Late-harvest (pozdní sběr) white wine is aromatically very rich, owing to the alternation of warm, sunny days and cooler nights during ripening, with a full and harmonious palate.
- Quality white wine shows pronounced notes of green apple, pear, citrus, blooming meadow flowers, and linden blossom on the nose and palate, with a colour ranging from green-yellow to yellow-green.
- Quality rosé wine is characterised by an aromatic profile of red fruits — sour cherries, sweet cherries, redcurrant, and wild strawberries — with a colour ranging from pale pink and salmon to light apricot.
- Quality red wine displays dominant notes of sweet cherry, sour cherry, and redcurrant on the nose and palate, sometimes with hints of green pepper and meadow flowers, and a colour ranging from light ruby to ruby.
- Kabinett white wine is distinguished by a richer fruit-and-floral bouquet, with notes of green apple, pear, peach, citrus fruits, meadow flowers, and linden blossom.
- Ice wine white shows pronounced notes of tropical fruit, ripe citrus, pineapple, banana, peach, and apricot on the nose and palate, with honeyed tones and blooming meadow flowers, and a golden-yellow colour.
