Terroir

• The vineyards fall within the southern part of the Thracian Lowland and the north-western parts of the Eastern Rhodopes, in semi-mountainous, rugged terrain at an altitude of approximately 250 m.
• The climate is moderately continental with a gentle Mediterranean influence, which makes winters mild and summers hot.
• The mean annual rainfall total is approximately 630 mm, and the cumulative temperature sum for the period with mean daily temperatures above 10°C (April–October) is 4,000°C.
• The mean daily temperature of the warmest month is 23.6°C.
• The soil types are cinnamon forest soils, lightly to heavily sandy-clayey, and calcareous chernozem-like soils, lightly to heavily sandy-clayey.

• The permitted wine-grape varieties for white wines are Tamyanka, and for red wines and rosé are Cabernet Sauvignon, Merlot, and Pamid.
• The training systems applied in the vineyards are Umbrella, Moser, and mid-trunk double-arm cordon, with pruning that is mixed and short, with a load of up to 54 buds per vine.

• The white wine has aromas of white fruits, citrus, and flowers, with a balanced, full-bodied, and fresh palate.
• The red wines have aromas of red wild berries intermingled with accents of spice, smoke, chocolate, and cinnamon, while the palate is fruity, full-bodied, and harmonious, with soft tannins and a sense of ripeness.
• The rosé displays a sparkling strawberry colour, with an elegant nose showing nuances of wild strawberry, cherry, and flowers, while the body is complex and juicy, with a pleasant freshness on the finish.

• The characteristic climate of the area, influenced by the slopes of the Rhodopes and the gentle Mediterranean effect, combined with the folded relief and the typical cinnamon forest soils, as well as the constraints imposed by human factors, predetermine it as a region for the production of full-bodied, extract-rich, and fruit-forward wines.
