Terroir

• Temperate-continental climate with a gentle Mediterranean influence — mild winters and hot summers.
• Terrain: broken, semi-mountainous, around 250 m above sea level — southern Thracian Lowland and the north-western Eastern Rodopi.
• Soils: cinnamon forest soils (light to heavy sandy-clay) and calcareous chernozem-like soils.
• Mean annual rainfall approximately 630 mm; heat summation (April–October) 4,000 °C; mean monthly maximum temperature 23.6 °C.
• The Rodopi slopes and Mediterranean influence, combined with a folded relief and cinnamon forest soils, shape the terroir.

• Permitted varieties: white — Tamyanka; red/rosé — Cabernet Sauvignon, Merlot, and Pamid.
• Pruning — mixed and short, with a load of up to 54 buds per vine; maximum 450 vines per decare.

• White: aromas of white fruits, citrus, and flowers; the palate is balanced, full-bodied, and fresh.
• Red: red forest fruits, spice, smoke, chocolate, and cinnamon; a fruity, full-bodied palate with soft tannins.

• The Mediterranean influence moderates the winters and intensifies summer warmth, fostering fruity aromas and ripeness.
• The cinnamon forest soils and broken semi-mountainous relief underpin wines that are full-bodied, extract-rich, and abundant in fruit aromas.
• A heat summation of 4,000 °C (April–October) ensures complete ripening and a sense of maturity in the red wines.
