Terroir
Natural factors
- Attica: purely μεσογειακό κλίμα, low humidity, virtually no frost, and rare hail.
- Attica is enclosed by the mountains of Hymettus, Πεντελικό, Πάρνηθα, Cithaeron, Geraneia, and Pateras.
- Παρνασσός: μεσογειακό κλίμα with a pronounced ηπειρωτικό κλίμα character; vineyards at 350–550 m elevation.
- Thebes: soils ranging from αμμώδες to αργιλώδες, neutral pH; vineyards up to 700 m on Mount Helicon.
- Παρνασσός: αργιλώδες-loamy soils with pH below 6, rich in calcium carbonate at the foothills.
Human factors
- Viticulture in Στερεά Ελλάδα dates to antiquity; Hesiod drank Biblinos wine made from the Biblias vine.
- Spata is a traditional winemaking centre with vineyards of the Σαββατιανό variety and a long-standing tradition of retsina production.
Terroir / wine link
- The distinctiveness of the wines is attributed to the combination of soil, climate, and the influence of the summer winds.
