Principal grape varieties

Terroir

• Thick loess covers the ridges and plateaus; on slopes, thin colluvial loess of 1–7 m depth appears.
• The characteristic soil is Ramann brown forest soil in its eroded variants, with clay-illuviated brown forest soil also present in Geresd.
• The loess contains 5–30% active lime; Holocene loess loam and sandy-stony loam soils have developed on it.
• Beyond Atlantic and Mediterranean influences, a continental climatic effect is also present; the water surface of the Danube moderates temperature fluctuation.

• The 1061 abbey foundation charter of King Béla I already names specific vineyard sites: Csint, Bika, and Fövestelk.
• During the Ottoman occupation, Kadarka spread widely, as did the kácis covering technique, regarded as a precursor to closed-vessel fermentation.

• Red wines: well-rounded acid structure, ripe tannins, spicy and complex aromatic profile, full-bodied and richly flavoured wines.
• In premium wines, tertiary aromas derived from barrel and bottle ageing predominate.

• The loess soil contains at least 5–7% active lime, which lends the wine a richer, more complex flavour profile.
