Terroir
Natural factors
- Transitional-continental climate with средиземноморско and Black Sea influence; Стара планина blocks cold northern air masses.
- Mediterranean influence penetrates via the valleys of the Maritsa, Tundzha, Struma, and Arda rivers into the southern parts of the region.
- Terrain is flat to gently rolling, between 100 and 500 m a.s.l., in the southern part of Bulgaria.
- Predominant soil types: канелена горска почва, humus-carbonate soils, leached чернозем смолници, and alluvial-deluvial meadow soils.
- Mild winters (average January temperature ~0 °C), hot and dry summers (average daytime temperature in the warmest month 21.5–24.5 °C); annual rainfall 500–650 mm.
Human factors
- 90% of vessels uncovered in archaeological excavations in the region are associated with wine — testimony to deep Thracian winemaking traditions.
- Vinification and processing are carried out in the region where the grapes are grown, and blending requires a minimum of 85% grapes from the respective region.
Product characteristics
- White wines: vivid golden colour with greenish hues; intense, multi-layered aroma that evolves in the glass towards sweet, floral nuances; full-bodied, balanced, fruity palate.
- Red wines: deep ruby colour with garnet highlights; aroma of cherries, sour cherries, blackberries, and dark plums accented by red pepper, spice, and chocolate; full-bodied palate with well-balanced tannins.
Terroir / wine link
- The mild преходноконтинентален climate with Black Sea and средиземноморско influence produces highly extracted, full-alcohol wines with noble tannins.
