Terroir
Natural factors
- The geographical area extends across the communes of Tuchan and Paziols, in the Aude, at the foot of the Tauch mountain, which reaches a peak of 917 metres above sea level.
- Around twenty soil types have been identified, the most prevalent being schists in the north, calcareous colluvium or scree at the foot of the Tauch, Triassic marls, and pudding stones or conglomerates on the higher ground of Paziols and the eastern part of Tuchan.
- The central floor of the valley is composed of stony terraces and clay-limestone soils, which are considerably deeper than those of the surrounding hillsides.
- The warm, dry Mediterranean climate receives approximately 700 mm of annual rainfall, concentrated over a limited number of days in autumn and spring, mainly in the form of thunderstorms and heavy showers.
- A strong northerly wind known as the Tramontane blows for up to 200 days per year, sometimes for several consecutive days at speeds exceeding 80 km/h; this dry wind limits the risk of downy mildew and botrytis.
- The Torgan, a stream that gave its name to the IGP, flows down from Mont Tauch and joins the Verdouble, a watercourse that runs alongside the gorge forming the western access to the zone.
- To the east, the limestone plateau of the Serre d'en Mouysset rises up and acts as a barrier against maritime air masses, while the col d'extrême marks the northern boundary of the zone.
