Natural factors
- The 4 sub-zones are structured around 6 rivers: the Alberche, Guadarrama, Jarama, and Tajo define their natural boundaries.
- Arganda: calcareous soils and gypsiferous marls (basic pH); Navalcarnero: siliceous soils across rolling farmland (acidic pH); San Martín: granitic soils on hillside slopes.
- Continental Mediterranean climate: vineyards between 480 and 1,000 m elevation, 658 mm of annual rainfall, and temperatures ranging from –17 °C to 40 °C.
- El Molar features soils of highly varied composition, making it a geological compendium of the other three sub-zones.
Human factors
- Vineyards trained as bush vines and dry-farmed at low densities; traditional practice of 'sobremadre': bottling without racking, leaving the wine in contact with its lees.
- Principal varieties by sub-zone: Malvar (indigenous) in Arganda, Navalcarnero, and El Molar; Albillo Real in San Martín; Tinto Fino in Arganda; Garnacha in the other three.
Product characteristics
- Whites show white fruit character (apple, pear); reds and rosés offer red fruit notes and sensations of ripe or jammy fruit.
- Sparkling wines display a fine, persistent bead, with aromas of fruit and lees, and a fresh, lively palate.
