Natural factors
- Shallow calcareous soils rich in potassium at elevations of 500–700 m, with south-facing vineyard exposure.
- Marine breezes reach the vineyards through the passes carved by the Kalamas river.
- Μεσογειακό κλίμα with cool summers (23–26°C) and winters dropping to as low as −10°C.
- High rainfall of 1,100–1,400 mm, concentrated between October and April.
- South-facing vineyards, free from summer humidity and cold winter air currents.
Human factors
- Ντεμπίνα has been cultivated uninterruptedly in Ήπειρος since the 7th century; in the 18th century, even Lord Byron admired the wines of Ζίτσα.
- Traditionally, the interruption of fermentation during winter and its second phase in spring in sealed vessels gave rise to the zone's αφρώδεις οίνοι.
